7 Layer Deliciousness!

This bar is absolutely Amazing!! So goey with the crunch on the bottom.... Heaven! :)
Very rich so go with smaller bars for parties, but they will definitely be back for seconds! You've just got to try it out!

7 Layer Bars 
First crumble 9 whole graham crackers
Then spread in a 9x13 pan and sprinkle with 1/4 c. crushed pecans


Next put 3/4 cup of coconut and toast in a 350 degree oven
This is the browned coconut
Next sprinkle 1/2 c. white chocolate chips
1/2 c. Chocolate chips
and 1/2 cup butterscotch chips! 
And sprinkle coconut on top. And then evenly spread a whole 14 oz. can of sweetened condensed milk...

You know that stuff that oozes out of the can the moment you start to open it?? :) yummm
spread over and put in a 350 degree oven for 25 min or until golden brown... 

GET READY and !!!!!!!!!

Sorry I don't have a final picture but the condensed milk gets goey and the chips melt 
and the crust gets crunchy....

Fresh Salsa!

With produce coming in from our garden I really was waiting to make fresh salsa or pico de gallo..
Finally those vegetables were ready! This year I was excited cause we planted herbs. Something that we have never done before and didn't have luck with in a pot. So we planted basil and cilantro!
Cilantro is big in salsa, so when that came I was excited! I just love fresh salsa but these measurement's aren't very exact and this is a very easy recipe. This is only a little, for tomato's aren't quite in abundance yet. But double or triple to your liking!

                              Fresh Salsa
  1 large and 1 small tomato diced as small or as large as you wish
1 medium green pepper diced about as big as tomato's or a little smaller
1 small garden onion diced tiny
a handful of cilantro  chopped 
juice of half a lime
8 drops of hot sauce
If you have someone in your house who doesn't like cilantro, it goes without  VERY well! 

Mix everything together and let refridgerate. Try to eat up quickly! When it's fresh, it's the best!!!

PB Chocolate Extraordinaire

Here's another one of my most favorite "candy" bars..  In this wonderful summertime weather be sure to have it in the fridge or if you have a cool house you can leave it out.. maybe.... :) So give it a try! It's extraordinaire!!!

 crumble 2 /12 cups graham crackers (or 9 whole long crackers) with a rolling pin
the gram crumbs should be in small bits like above 























Next 1 cup butter.. Here's a trick! Add 1 cup water to large measuring cup and add butter till it goes to 2 cups, totally submerging it in the water.. Mmm I love tricks!  Then put the butter in a microwavable bowl and melt partially.






Add the partially melted butter to the graham crackers. ooh good! No. It gets good....  :)



Now add in 1 cup Peanut Butter (PB)





And it only gets more amazing!! All you need to add is 2 1/2 cups powdered or confectioners sugar! This turns out like eggless cookie dough. :) Mmmm

Now spread this out in a 9x13 ungreased pan. There's definitely enough butter in this thing. :) 
           Spread it out and it doesn't matter how you do it!

            Now to make the chocolate goodness to go on top.
            Melt 1 cup chocolate cups.  and stir in the peanut butter...



Then stir in 1 tbls. Peanut Butter.. Or about  1 tablespoon.... 


Smear around and it should turn out something like this...

Homemade Snicker Candy

County fairs in Minnesota means taking out the cool recipes and giving them a try for the blue ribbon at the local county fair. With the fair coming fast it was time to give this one a try!
We think that this is definitely better than original Snickers candy bar, and will become an extra ordinary family favorite. So get ready for this sweet treat!

Homemade Snickers Candy
Ingredients:
2 cups milk chocolate chips
3/4 cup peanut butter (divided)
3 cups marshmallows
2 teaspoons light corn syrup
1/2 cup evaporated milk
1 cup peanuts
1/4 cup butter
1 cup sugar
1 14oz bag caramels

Grease a sheet of wax paper big enough to go in a 9x13 pan. Grease the whole sheet. I just did the bottom and the sides stuck. But who care's?

Melt the chocolate chips on medium low in small saucepan or watch carefully and check each 10 seconds in the microwave. Then stir in the peanut butter. Pour half into the pan and place in the freezer, save the rest for later for the top.

Now melt butter in a small saucepan on medium heat and add 1/4 c. evaporated milk. Boil for 3 minutes. After the 3 minutes, remove from heat. Melt marshmallows and measure 2 1/2 cups and mix in your corn syrup and add to your butter/milk mixture. Stir and add 1/4 c. peanut butter and the peanuts. Take cooled chocolate out of the freezer and put peanut mix on top and place back in freezer on a flat surface.

Unwrap your caramels and place them in a small pot with the rest of the evaporated milk.  Melt stirring constantly. When it is completely melted put on cold peanut layer.
Now melt the remaining chocolate and peanut butter. After the caramel has cooled enough, put on the chocolate and place in freezer for about 30 minute's or the fridge. And if you can't wait like me you should at least let it sit 15 min.. :(  But it is well worth the wait for this is AMAZING!
